Can anyone tell me the difference between a latex and an acrylic modified thin set? More importantly, when and where would I use either one? Is either one a better installation? Thanks.

im not sure there is a difference - acrylics are latex? Or very similar to latex chemicaly at least?
Latex is made from natural rubber (most of the time I think) and acrylic is synthetic. Latex is more flexy (both the natural and synth kind). If you are installing over wood, or some other relatively flexible surface, you should choose latex. There are specific kinds for flex. Both latex and acrylic are suitable over concrete.
