ACfA, i like that. not the cook shrimp in the souce, but seperate. great touch and rule.

ACFA I made almost that exact same dish with a few slight variations, its by far the best thing I have ever made (non-steak related), its almost got a spicy shrimp scampi flavor. I think I threw in some fresh baby spinach when tossing it with the pasta (orecchiette), and mine involved scallions and chopped shallots during along with the garlic cloves to sautee. Add a couple tablespoons of tomato paste to thicken the sauce.

Brown 2 lbs of ground beef or bison meat, drain.
Add 1/2 a chopped onion, 2 cups finely shredded cabbage, 2 chopped garlic cloves to meat, stir and cook till hot all the way thru.
Add oregano, salt and pepper to taste.
Roll out bread dough (I use the frozen kind that I let rise) to make thin sheets, in rectanglular shape. Cut dough into squares about 5-6" big.
Place a spoonful or two of the meat mixture in the center of each square, add a slice of cheese if desired. Fold in corners of dough to the center over meat and pinch together. Pinch together seams, so it makes a pocket sandwich. Place on greased cookie sheet and bake in 350 degree oven for about 20 minutes - or until golden brown on top. Good with catsup. Makes 12-15. Good to freeze and reheat individually.

Beef Stew;

julienne two medium onions and sautee with olive oil, stirring until onions start to look translucent.
add 1-1.5 lb sirloin beef cut for stewing and *sautee w/ unions (salt and pepper now) until carmelization starts at the bottom of the pot.
mix in a tea/table spoon of tomato paste.
add 4-5 cups of hot water and bring to boil and reduce heat to low simmer cover the pot.
chop 2-3 carrots, 1-2 turnips, 2-3 red potatoes (you can add more of your favorite vegitables too and take out the ones you don't necessarily like, a lot of people like to add mushrooms, i like some okra)
add vegies during the last 30-40 minutes of cooking. (when you add cold vegies, turn up the heat and when boil is restored turn back to simmer)
it should be good in 1.25 to 1.5 hours.
good with bread or rice or mashed potatoes etc.
recommended for gray and overcast days.

*red wine is also recommended at this stage.

thank you. very important point of course, that i missed to point out.
but of course, de glazing takes a place when a small amount of liquid is worked in slowly after the carmelization.
sometimes i miss my job when i worked in a commercial kitchen during my last couple of semesters in school. i mainly chopped onions, peeled potatoes and boiled them in water etc., but it was great to see the process of larger operation.

Beer - the frozen drink:

Get a Magic Bullet.
-fill party mug or tall up with ice leaving about 1 inch at the top
-add beer, again leaving 1 inch
-top with pretzels
-using the cross blade, blend until smooth

Seered King Fish and Green Salad.

This is a simple dish, that can be made in about 5 minutes

Sliced King Fish
Salt & Pepper
Liquid Seasoning
Celery
Lettuce
Local Lettuce (keep treehugging)
Green Pepper

Salt, peper, liquid seasoning to fish on both sides. Place in hot pan with a half teaspoon of olive oil. Dark on both sides.

Chop lettuce, celery and green peppers. Place fish on top - eat and let me know how it turned out.

For added kick, substitute pickle brine for water. Esp. a good Polskie Ogorki brand. Great for colds, fevers, hangovers etc...
