Pesto and pasta is my quick meal. You need a jar of pesto. Boil in a pan some pasta - spahetti or tagliatelli - then drain, add knob of butter and generous tablspoon of pesto. Mix. Serve and sprinkle a handful of grated cheese on top. Chop up a tomato too, something juicy.
There you are, 10 mins and only one pan required. Yum!

my favorite kinda quick and healthy meal - Pasta Primavera:
Ingredients - random variety of vegetables, olive oil, pasta.
(boil water for pasta)
Put olive oil in skillet on medium.
Cut veg. to desired sizes.
(water now boiling, put pasta in...)
Place veg. in skillet in desired order - allowing more time for things that take longer to cook, less for those that don't...
Saute' for 10-12 minutes.
(remove and strain pasta)
Serve.
total time including vegetable prep = 20minutes, +/-
I usually use garlic and/or onion, bell pepper, broccoli, tomato.
Zucchini also works well, as do garbonzo beans, spinach etc.
It keeps well, so you can make extra veggies and pasta, and eat it throughout the week. I like to throw some goat cheese or fresh mozarella on it too...
I used to gorge on Ramen all the time when I was in college, my roommate got me hooked on Sapporo Ichiban. I used to make Ramen a lot, throw an egg in with some vegetables...Then I just got bored with it.
A few months ago, I was about to buy a package for old time's sake, and looked at the calorie, fat, and sodium content...That stuff was off the charts!! It is practically poison. Something like 1200 calories, 30 grams of fat, 50% of daily intake of sodium..Or something like that...
The Spicy African Peanut Soup looks like the most interesting recipe..with the mix of peanut butter and tomato...
My recent interest in beer brewing has made me want to break out the crock pot again. When brewing, we have been keeping careful track of EVERYTHING in a notebook, and I would have some great recipes if I had been as diligent with my crock pot experiments.
Basically, put things you like together in a crock pot in the morning, eat when you get home. Evolve as needed. Very forgiving in terms of a several hour window of 'ready to eat' and you can make enough to freeze/reheat.
Homemade hamburgers with buffalo meat are really tasty and really quick.
also:
Roman pan-fried lamb
(takes about 45 minutes total, but most of it is in the 35 minutes waiting for it to simmer)
1 tbsp oil
1 tbsp butter
1.5 lbs lamb (1 inch cubes)
4 garlic cloves, peeled
3 sprigs thyme, de-stalked
6 canned anchovy fillets
2/3c red wine
2/3c lamb or vegetable stock
1tbsp sugar
1 3/4 oz black olives, pitted and halved
chopped parsely to top
1) oil+ butter+ lamb in a skillet, ~5 minutes or until meat is brown.
2) mash together garlic, thyme and anchovies (make a paste)
3) add wine and stock to frying pan, then mix in paste and sugar
4) bring to boil, cover, reduce heat and simmer for ~35minutes. remove the lid for the last 10 minutes to allow sauce to reduce.
5) stir in olives, top with parsely, eat.
goes great with mashed potatoes.

4 chicken breasts, no skin
3.5 oz full fat soft cheese, with herbs and garlic
8 slices parma ham (prosciutto)
2/3 cup red wine
2/3 cup chicken stock
1tbsp brown sugar
1) slice a pocket in chicken breast, stuff with cheese.
2) wrap each breast with 2 slices parma ham, secure with string
3) in a frying pan, bring wine and stock to a boil. when it boils, add sugar.
4) add chicken breasts, simmer 12-15 minutes till chicken is cooked.
5) pull out chicken, keep warm. reheat sauce until thickened.

2 tablespoons lemon juice

1/3 cup paked fresh basil leaves chopped
¾ cup freshly grated Parmigiano-Reggiano (60gr.)
6 sprigs fresh basil for garnish

Add coarse salt to 2 gallons (7,5 liters) of rapidly boiling water.
Stir spaghetti and cook until al dente.
Drain.

Cover with a pizza sauce - not too much
Add some grilled bacon, blue cheese and partially steamed brocoli
Some fresh basil, pepper and parmesan cheese
Bake till cheese is melted

Italian bread
Chop the tomatoes and garlic. Combine them with the olive oil. Sprinkle in some basil. Toast a few slices of Italian bread and top with the mixture. Enjoy with a nice Chianti.

Slice the cooked chicken into thin strips - heat in the micro for about 30 seconds
Heat the tortilla in the micro for about 8-9 seconds.
Smear a small amount of sour cream in the tortilla
Sprinkle in some cheese
Add the chicken
Enjoy!

#2 - "Asiago Pasta"
Ingredients:
Your favorite pasta
Sauteed Mushrooms
Grilled chicken or shrimp
Shreaded Asiago Cheese
Butter
Prep:
Cook the pasta - drain and put back in pasta pot - add a little butter to taste
Saute the shrooms
Grille the chicken or shrimp (or buy pre-grilled)
Shread some Asiago
Combine everything
buy a pork tenderloin, those ones that come already seasoned in bags, shaped like a tube. put in shallow oven-safe dish, add 1/2" or so of water at the bottom. bake in 425 oven for 40-55 minutes. make juices into gravy for mashed potatoes. slice roast pork into 3/4" medallions
had this for dinner tonight. 10 minutes prep time, oh so yummy. good leftovers. easy clean up.
use tortilla for crust, add sauce, pepperoni, peppers, shrooms, garlic, cheese, olives, etc. bake for about 10 minutes in 450 degree oven. eat with cottage cheese on the side and a simple red wine.
make a lasagna and it'll last you for at least 4-5 dinners.
get creative w/ pasta. i invent sauces all the time depending on whats in the fridge. i got into a habit a few months ago of eating out but it's wasteful and costly. trader joe's is your friend. they have some really good frozen meals that aren't an arm and a leg.
Burger King, Mc Donalds, Boston Market, Dennis, Subway, Kentucky Fried Chicken, Burger King, Wendys, ect...ect... [Run...]... the food
is lethal.. a mouse told me so.
3 eggs
quarter cup of flour
quater cup of milk
adobo
oregano
pepper
lemon juice
choped firm vegitables (onion, cabbage, pepper...)
beat untill batter is formed then pour in frying pan over medium heat
serve with some salad and a condiment of some kind
plain yogurt is quite good on it
add dry ingred. to mug
mix well with fork
add egg, mix thoroughly
Pour in milk, oil, vanilla
Mix well. Add chips if using
Put mug in microwave, cook for 3 minutes
will rise over top of mug - Do not worry
allow to cool a little and tip onto plate if desired
1 cup flour
a pinch of salt
a stick of butter

-put water, butter, and salt in a sauce pan and boil.
-when you get a consistent boil, quickly add the flour and stir.
-it will become one mass.
-remove from heat.
-if you have a standing mixer then install the paddle attachment. transfer the dough into the mixer bowl and mix to medium-low speed (or number 2 speed)...add one egg and mix for 30 seconds...add the other egg then mix for 30 seconds...increase the speed and mix for 15 seconds. make sure the egg is well mixed and the dough becomes gooey and creamy
-if you don't have a mixer then place the dough in a bowl...add the egg one at a time while stirring constantly (simulate what you think the standing mixer will be doing as described above) . i haven't tried this method but I'm sure it's not that critical. i think it's more important to transfer the dough out of the sauce pan and into a bowl because I can imagine the egg hitting the hot sauce pan and the egg immediately cooking.
-get another pan and to conserve oil, only put enough that you have about 1/2" worth of oil. you can flip the churros to brown the other side (instead of deep frying)
-since i don't have a piping bag i used a sandwich bag. fill the bag with the dough and cut the corner. the size of the cut will depend on how big you want the churros to be.
-make sure the oil is super hot and start squeezing the dough out of the bag and into the oil...spirals, lines, whatever shape you like.
-flip to brown the other side.
-let cool and roll them in a mixture of sugar and cinammon
one of my favorites, Paella!! i wouldn't exactly say it's quick and easy, but delicious and worth it:
2 tablespoons olive oil
3/4 pound medium shrimp, peeled and deveined
12 ounces chicken sausage, sliced 1/2" thick
1 whole medium onion, finely chopped
2 cloves garlic, minced
1 1/2 cups long-grain rice
1/4 teaspoon paprika
1/4 teaspoon ground turmeric
14 1/2 ounces diced tomatoes
29 ounces reduced sodium chicken broth
coarse salt
fresh ground black pepper
1 cup frozen green peas, thawed
1. In a heavy 12-inch saute pan, heat 1 tablespoon oil over medium-high heat. Cook shrimp until just pink on both sides, 4 to 5 minutes (do not overcook). Transfer to a plate.
2. Add remaining tablespoon oil and sausage to pan; cook over medium-high heat until beginning to brown, about 2 minutes. Add onion, and cook, stirring frequently, until translucent, 3 to 4 minutes. Add garlic and rice; cook, stirring to coat, until rice is translucent, 1 to 2 minutes.
3. Stir in paprika, turmeric, tomatoes, and broth, scraping up browned bits from bottom of pan with a wooden spoon. Season with salt and pepper.
4. Bring to a boil, then reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed almost all liquid, 20 to 25 minutes. Stir in peas; cook 1 minute. Stir in cooked shrimp; serve immediately.
yeah i've made it with chorizo before. The beauty of paella is you can add any combo of sausages and shellfish to it. I've done it with crab and crawfish before too! Love it

1 jar of chunky peanut butter
1 jar of tabasco sauce
Mix, heat, and eat for days.
If you want you can grille some chicken and add it to the soup.

1 box Velveeta shells & cheese
make shells & cheese. Mix in chili sauce.

-if you have a standing mixer then install the paddle attachment. transfer the dough into the mixer bowl and mix to medium-low speed (or number 2 speed)...add one egg and mix for 30 seconds...add the other egg then mix for 30 seconds...increase the speed and mix for 15 seconds. make sure the egg is well mixed and the dough becomes gooey and creamy
-if you don't have a mixer then place the dough in a bowl...add the egg one at a time while stirring constantly (simulate what you think the standing mixer will be doing as described above) . i haven't tried this method but I'm sure it's not that critical. i think it's more important to transfer the dough out of the sauce pan and into a bowl because I can imagine the egg hitting the hot sauce pan and the egg immediately cooking.
-get another pan and to conserve oil, only put enough that you have about 1/2" worth of oil. you can flip the churros to brown the other side (instead of deep frying)
-since i don't have a piping bag i used a sandwich bag. fill the bag with the dough and cut the corner. the size of the cut will depend on how big you want the churros to be.
-make sure the oil is super hot and start squeezing the dough out of the bag and into the oil...spirals, lines, whatever shape you like.
-flip to brown the other side.
-let cool and roll them in a mixture of sugar and cinammon
one of my favorites, Paella!! i wouldn't exactly say it's quick and easy, but delicious and worth it:
2 tablespoons olive oil
3/4 pound medium shrimp, peeled and deveined
12 ounces chicken sausage, sliced 1/2" thick
1 whole medium onion, finely chopped
2 cloves garlic, minced
1 1/2 cups long-grain rice
1/4 teaspoon paprika
1/4 teaspoon ground turmeric
14 1/2 ounces diced tomatoes
29 ounces reduced sodium chicken broth
coarse salt
fresh ground black pepper
1 cup frozen green peas, thawed
1. In a heavy 12-inch saute pan, heat 1 tablespoon oil over medium-high heat. Cook shrimp until just pink on both sides, 4 to 5 minutes (do not overcook). Transfer to a plate.
2. Add remaining tablespoon oil and sausage to pan; cook over medium-high heat until beginning to brown, about 2 minutes. Add onion, and cook, stirring frequently, until translucent, 3 to 4 minutes. Add garlic and rice; cook, stirring to coat, until rice is translucent, 1 to 2 minutes.
3. Stir in paprika, turmeric, tomatoes, and broth, scraping up browned bits from bottom of pan with a wooden spoon. Season with salt and pepper.
4. Bring to a boil, then reduce heat to a simmer. Cover, and cook until rice is tender and has absorbed almost all liquid, 20 to 25 minutes. Stir in peas; cook 1 minute. Stir in cooked shrimp; serve immediately.
i loves me paella, well before i went vegetarian. the paella i loved had some more shellfish, and chorizo, damn that was good.
yeah i've made it with chorizo before. The beauty of paella is you can add any combo of sausages and shellfish to it. I've done it with crab and crawfish before too! Love it
