Johnathan Segal is just over 40 but he seems to have found a niche as a developer/builder architect. He has managed to put the control back with the architect. Does decent (not groungbreaking) design. Seems to be a good businessman.
Not sure if the criteria is fair. After all, how old was Frank Gehry when he got his start? The measure should be "young architects" meaning from when they began their careers, not "young" in absolute terms.
The plot.dk firm has some cool projects. I like their presentation style...reminds me of a bunch of Dutch offices. I really like their Grand Egyptian Museum entry...its pretty vulgar but fun. It looks like someone picked up a pyramid and violently threw it a couple miles and left it lodged in the ground upside down. Nice.
urbanist - to heed your fears most of the guys we celebrate were the "ones to watch" when they were around 40. Gehry was highly celebrated after his big switch from boxy-stoney stuff to stuff with airplanes coming out of their asses.
Design Revolution I'm with you on the David Adjaye - he's played his cards right so far. And he's British - they tend to be elated quickly. Its the "we love foriegners" thing I guess.
Oh yea and studiogang, there are a couple more out there, that are pretty good - too many to name. But as with that book 40 under 40, alot of them disappear as soon as they appear. Somehow you just need to know how to keep the flame and flash going.

Of course they have 'won' the Calumet project and several others, ontop of being represented at the Venice in 2004. But I think that many people are waiting to see what is going to be next from them.

After PS.1 2004 nArchitects have won several competitions and they are teaching quite a bit. A friend of mine works there and I've seen some of their recent work, it's pretty good, we'll see what it looks like built.
gang is 41 and schendel is 48 so they dont they arent 'under 40's' and urban lab really has built naught. the envir center of gang is not going ahead as the pbc has recognized that 'fair play' for the comp was at questionable and the mayor needs no further scandel at this point in time. lots and lots of young practices are doing exactly what urban lab are doing competition wise and are equally talented - the bridgeport 'crap' is their own house so at least they got some commision.
nArchitects are definitely interesting - eric and mimi are nice people and work very hard. jj at slab is another interesting oma alum doing some good work.

wasn't that true of the previous generation as well - however its only now that they are getting a chance to build on larger scales (think ZH)

Ive never heard of urban lab, but my first impression is that they arent very creative with their name using "urban lab" how droll.
