Just walking around is definitely a must. There's so many interesting things you can find on your own, it's almost ridiculous. And I think doing things like that can lead to a more honest experience of the place.
bike to the cloisters
eat at Sylvia's in Harlem
walk the Hudson River Walk and watch the trapeze students
walk the Brooklyn / Williamsburg bridges
roller blade in Central Park
...but do not take a helicopter ride
(or you might end up in the East River!)
oh..and HAVE FUN...NYC is fantastic..everyday is a new day here!
go to the Whitney (before they destroy it, if it's not too late), but first have coffee and eggs at a hole-in-the-wall operated by immigrants (across the street), and afterward, get a hot dog from the guy who sets up outside the museum at around noon.
TWBTA's Museum of Folk Art is also worth repeated visits. It's a great little bldg, very tactile and spatially diverse.
Otherwise, you can't forget Coney Island. Get a hot dog there too...

Then Atlantic Avenue for Night Life, good bands, cheap Beer, and a bunch of hipsters wearing all black, and really thick Black glasses!
