There was a lot of dumpster diving at night when the old school was in a light industrial area in Santa Monica. Light metals. BIC pen factory, factory printing LPs, wood shop, architect’s offices, you name it. Best materials
plus what rich students threw away after a few cuts. Or, gave me for asking.

what's your favorite material to use for architectural model? I'm trying to do some exploration by using variety of material

Mine, was poutin and Labatts.

There are really only two options: Chisel your whole model out of a single piece of Carrara marble or just use chipboard.
