The National CAD Standard in the USA has a whole section devoted to a standardized set of symbols. You can find older PDF versions of the standard for free if you look around on the web.
Most symbols are going to be pretty common across all firms (elevation markers, section cut lines, grid lines, etc.). But some of them kinda just get made up by a firm and then used as that firm's standard. Currently our firm uses an oblong not-quite-oval looking thing for door tags, and we just rotate it (to match dimension orientation) for doors that are at different angles, but I used to work at a place where it was always just a circle, which I always thought looked too much like other symbols. Usually lighting, electrical, mech and plumbing symbols are pretty standardized.

Architectural drafting
Is there any standardization for architectural drafting symbols? A symbol library determined by institutions?
yes!
architectural graphic standards has a standard for architectural graphics.
We all just make up shit, so there is no way for the GC to know what we’ve actually drawn. That’s the only way we can keep control of the projects.
