what is the difference between a 6" metal stud wall that is composite vs. not.

Assuming I'm following what you're asking: It's design based on the presence of a sheathing product on the faces of the studs.  The gypsum, or whatever board, add structural value to the assembly. 

If you have to ask the question, you shouldn't be doing it.

googled composite metal stud wall and selected the first thing

so i saw 2 wall details, they looked the same  metal stud and 5/8 gyp both sides. so assume by the article above, one detail uses the gyp to make it stronger eventhough they both say non bearing. a lighter, cheaper stud can be used, right.
