people are going to give you shit about these kind of questions unless you "prove" that you've done your "research"

The number of projects to include in a portfolio will depend, mainly, on how many projects you *have* and how detailed those projects are.
If your background is in architecture, admissions committees will likely expect several thoroughly-detailed architecture projects, augmented (perhaps) by additional work - graphic design, sculpture, painting, etc. if your background is in the fine arts, you may have 20 projects, but only one page for each project. If your background is in another field, you might have to be creative.
I think you'll get more useful responses on here if you post what you've got already and ask for critiques. Ultimately, the portfolio is not about the number of projects, but the quality of those projects, and how you present them.
