favorite ways of making grilled cheese sandwiches

A local restaurant in Western Mass makes a apple, bacon grilled cheese that is truly extraordinary.

One of things I missed out on while in LA was the grilled cheese night at the La Brea Bakery restaurant, Campanile. But I did have plenty of grilled cheeses at In-N-Out.

Also, try brushing melted butter onto the bread before slapping it on the griddle. My wife has started doing this and it is fantastic.

Hardobread - available at your corner Jamaica store
Salt-free Butter
Cheddar (oddly this also tastes good using crap sliced cheese)
Bread and Butter pickles
Fresh Tomatos

Butter one side of each slice of hardobread place on a hot pan, flip one slice and add cheese. Wait 2 minutes then added remainder of ingredients and cover with other slice of bread.

eat

You will probably need to make another subsequently, repeat!

Sauteed Greens (Broccoli Rabe and/or spinach, garlic, red pepper flakes)
Roasted red pepper
Deep fried eggplant

grilled halloumi with wild thyme, sauteed cherry tomatoes in garlic and herb, capers, whole grain bread drizzled in olive oil and basil then toasted.

actually before they gave me the upchucks the best to have with a grilled cheese would be a clamato + beer. Now it just tastes fowl to me.

Laser cutter - etch a dense enough pattern in it to heat up the whole sandwich, melt all the cheese. Obviously a thin bread and medium or soft cheese work best for this.

Me and my family enjoy cooking grilled cheese sandwiches http://www.cuisinian.com/grill/7457-1.html, and here's how to make them. First, we kook meat on a barbeque grill, then slice hot meat and put cheese on the top. Then we put everything into a bun and add onions, ketchup, mustard and other additives. Tastes great, but is too fat for everyday cooking, and grilling proces consumes a lot of time... But it's fun!

Inside out grilled cheese is the best grilled cheese.

Buy baguette of french loaf. Cut in half longitudinally in XY plane. Turn bread "inside out" - so the fluffy interior of the loaf is being caramelized against the skillet and the cheese is getting all melty against the savory crust.

you people make me sick.  a grilled cheese is bread and cheese.  if you want to add other shit like pickles or meat, that is fine, but what you have is a MELT.  a grilled cheese is bread cheese and maybe a spice, mayo or mustard.

I don't like it but everyone I make it for does...bun-cut a big glazed donut, butter the cut sides of the 2 halves, pile the cheddar on, and grill with the cut sides out.  Day old donuts are easier to cut.

the best tool for homemade mayo is the blender, because you can get a good emulsion very easily.  sometimes i use clarified butter for the fat but generally 2 egg yolks +1/4cup to 1/3 cup of good olive oil, with maybe 1/8th tsp of lemon juice.  if i don't use lemon i'll add a touch of beau monde.  the key is to whip the eggs in the blender then, with the blender on, slowly add the oil in a gentle stream.  there are youtube videos that explain the exact technique.

My favorite way I've tried so far is with mozzarella cheese, bacon, and big tomato slices.  Ham and spicy mustard are also good grilled cheese additives...  Mmm, I know what I'm having for lunch tomorrow...

you can also do it dining hall style and use mayo on the outside of the bread in lieu of butter/ oil- i didn't believe it, but it is awesome. also bacon. tomato. gouda cheese.
