Um... Inox or Aluminum is going to have to get pretty hot to become "over baked" in the sun, unless you are referring to it getting too hot to touch or lean against.
The whole idea behind using (especially Stainless) as cladding is that it has a natural passivation layer so there is no coating required other than what forms due to the environment.

I guess I don't really understand your question.
What is your goal? There is no coating that will expel heat, but a white paint will absorb less solar radiation.
