Location is a fully roofed outdoor kitchen - alcove arrangement, basically open on one side. Outlets of concern are the ones above the countertop for small appliances etc
Or, just install the goofy bubble housings to pass inspection & then pull them afterwards?
I spec'd some really cool pop-out ones on my last project. I'll try to remember the name but I've blocked that entire traumatic part of my life out, and to be fair, have been taking a whole lot of bong rips in my van down by the river these past few months.
i've spec'ed popups as well, but i've not had an inspector comment on their acceptability for exterior use (& they start at $300/ea)... and IP-44 spill proof is useful, but not listed for wet location
the IP-66 ones I find must be installed in 4" of concrete & typically have gray plastic covers, which i'm not fond of on a quartz countertop
[not to mention I've had listed wet light fixtures that filled with water despite the IP-66 (dustproof & water jet proof)]
...leaning towards an off-the-record suggestion of removing bubbles on a wall mounted backsplash gfci
I use Alrington low profile boxes for exterior outlets. They look so much cleaner than the standard bubble in my opinion. They have siding step boxes as well for a tight fit.
Elec outlet suggestion for outdoor kitchen?
Are there decent looking outdoor elec outlets?

Rest assured though, they are out there.
I've been down that rabbit hole too - you are thinking of this accordion type cover: https://www.hubbell.com/taymac/en/Expandable-In-Use-Cover
