Opening a restaurant, even for the most seasoned owner, is full of unexpected hurdles. Success is an illusive balance of improvisation and consistency. Some restaurants are laboratories for innovative cuisine. Some restaurants are designer showcases. ENCASED is an active prototype in which to explore, test and develop sustainable restaurant operational, product and design strategies. In short, ENCASED is what happens when a one-time restaurant owner decides to become an architect ... and then as an architect again becomes a restaurant owner.
