In the tradition of French charcuteries, the Bedford Cheese Shop was designed to showcase a wide range of cheese, meats, cornichons and breads with maximum visibility from the street. Original pressed tin ceilings, moldings and doors were maintained, while new stained oak millwork was designed to envelop refrigerator cases and display various levels of merchandise. An energy efficient air conditioning system was designed to refrigerate the entire 600 SF space. Activities aboung in the room for cheese classes and tastings, and cheese caves are provided for the aging of Bedford's selection of quality cheeses. Two locations - one in Williamsburg and one in Gramercy Park - have become neighborhood favorites.
