Not sure how "high art" you're looking to go here, but some good examples of the heavy consumerist models can be found in Vegas Casinos. If this is the way you're going check out V-bar and the Vivid nightclub at the Venetian. They don't necessarily problematize the bar/nightclub program but they do have their inflluences...
I checked out the Doug Fir thing, from the mention in Record, interesting use of de-familiarization, but not to my particular liking either.
sharrell - this is intended to help in conversations with client/principal, so everything is welcome. He's responded well to LTL renderings and images in the past (on a different project), but is also into thematic Vegas stuff...so, all types will aid the discussion...
having just finished a restaurant and another bar myself...i would suggest looking a a couple of books that were recently released... images always help especially when trying to understand how important light is to the design!
buy the books...do a search on restaurant design on amazon...you will find hundreds of pretty picture books.
thanks aaron. the last shot of the parlor is for those who want smoke before 11p. after 11p smoking can happen anywhere. it's a nice touch to create a non-smoking environment without making smokers go outside.

diller/scofidio's voyeuristic bar is a nice one to check out. can't remember the name at the moment when it comes to me...
I'm not a fan of it, but Doug Fir by Skylab. there's a link to skylab on this site.

more importantly is to understand the larger idea....and do it well. what makes their place different?!?
e - that mural is tight. I like it a lot.
we're probably gonna incorporate a mezzanine as well, so any such example (like Brouwser's) would be especially helpful...
