Could anyone recommend a designed office space which has been finished-out in a space where no natural light (daylight) is available? Such as underground or in the middle of a very wide building with no access to exterior walls or roof.
Books, built designs and/or images of such designs are welcome. Currently doing a study on how to illuminate such spaces with very limited to no daylight access at all.

Sounds like premeditated Sick Building Syndrome in the making. It may be best to attempt convincing your client to find another existing location or build new if possible.
If not, lighting, ventilation, vegetation, water features etc. can help give a sense of/ simulate natural surrounding.
If you can run a chase into upper floors to penetrate the roof you could provide skylights/solar tubes similar to listed below.
even prisons have daylight. The OP has some serious issues here... or he works for Apple and is trying to help the poor smucks stuck in the centre of their production camps.
