I've seen a lot of entry level job requiring a minimum of 1 year work experience but this is a new one.

If all you are offering is a little money and the chance to work on a project that won't make any money, why do you need their help? Why not just do it on your own time as a hobby? That's what it sounds like to me.
If it really is purely academic, can you offer the students academic credit?
Whatever the case I'm sure you'll find some students willing to do it, but that doesn't make it ok in my opinion. $5 an hour is not sufficient compensation.
