Graduate School Portfolio (No background in Architecture)

Hello all.
I am currently working on my portfolio for grad school and since I don't have a bachelors in Architecture (I have it in Civil Engineering) I have been looking at lots of other grad school portfolios. Something I noticed was common in all those portfolios was that they all resemble a book, basically when looking through them the pages flip like a book and the content is designed to take advantage of this.
Is that the kind of portfolio colleges want? or would a regular file (page by page scrolling - NO fancy flipping) be ok?
The school I'm applying to wants a pdf, so I'll be submitting online.
Also, what landscape (horizontal) size would you all recommend I use 11X8.5 , 12X8 (inches)?
