OMA overhauls 1970s modernist building for Singapore cooking club and campus

OMA has completed the AIR CIrcular Campus and Cooking Club in Dempsey Hill, Singapore. The scheme saw the overhaul of an existing modernist building and surrounding green space into what the team calls “a place for novel dining experiences, inviting broader thinking and discussions about food and the environment.”

Designed in collaboration with entrepreneur Ronald Akili, and chefs Matt Orlando of Amass and Will Goldfarb of Room4Dessert, the scheme includes open kitchens, research space, and a cooking school for visitors.

Zooco creates ‘Brutalism over the sea’ with Spanish restaurant inside renovated 1970s concrete structure

Madrid-based studio Zooco has completed an extensive renovation and extension of a 1970s concrete structure in Santander, Spain. The Cantabrian Maritime Museum restaurant has been constructed inside an architectural complex that also includes an Oceanographic Center designed by Vicente Roig Forner and Ángel Hernández Morales, built between 1975 and 1978.

The original concrete structure sees two square forms connected by a canopy. The interior spans three floors with a central courtyard covered by a vault of paraboloid membranes, while a 2003 renovation and extension saw the addition of a pyramid-form aluminum structure to the western facade and roof.

Modellus Novus completes Frenchette Bakery redesign at the Whitney Museum of American Art

Modellus Novus has completed its redesigned new Frenchette Bakery space at the Whitney Museum of American Art in New York City.

The project replaces the museum’s closed original USHG Restaurant on the ground floor with a new café that serves as the first flagship for the popular West Side eatery, which opened in October of 2020.

The plan retains as much of the open concept intended by Renzo Piano for the new eight-year-old museum, confounding a sense of interiority to “create connections between diners and their surrounding community.” Artist Rashid Johnson’s site-specific installation New Grace completes the design, complementing a 70-foot central light fixture above the bar that's made from wood and rice paper.

Frank Gehry will design a new Gladstones restaurant replacement for Wolfgang Puck in LA

After more than 50 years in service, iconic oceanfront restaurant Gladstone’s is slated to close within the next year, making way for a long-anticipated restaurant from some of L.A.’s most recognizable names. In 2024, celebrity chef Wolfgang Puck expects to break ground on a new, Frank Gehry-designed, two-pronged project that will rise in its place. The new operators plan to break ground in early to mid 2024 and expect at least 18 months of construction before a 2025 debut.

The Pacific Palisades site sits on a total 2.8-acre parcel abutting the Pacific Coast Highway and Will Rogers State Beach approximately three miles north of Gehry's now underway Ocean Avenue project in Santa Monica.

Puck promised to deliver an "approachable, high-quality cuisine in a distinct architectural setting" when the redevelopment was first announced in 2018.

Also in Los Angeles, Gehry’s 800,000-square-foot Warner Bros. Second Century studios expansion recently opened, while a buyer is still being sought for the planned mixed-use project at 8150 Sunset Boulevard in West Hollywood.

Placing a ‘culinary emporium’ inside an old Toronto postal station

Giannone Petricone Associates has completed Stock T.C, a “culinary emporium” designed to offer a selection of high-quality ingredients, ready-to-eat foods, and an inviting dining experience.

Situated in a historical postal station in Toronto, Canada, the space includes an open market at the ground level, a 200-seat bistro on the second floor, and an event space with a circular bar and roof terrace on the third floor.

The restoration and repurposing of the 1936 limestone postal station included lining the perimeter walls with a second skin, from which shelves, lighting, and acoustic dampeners are hung, integrating the original structure with modern installations.

IKEA unveils new plant-based food court concept

Ingka Centres, a subsidiary of the Ingka Group (IKEA parent company), has announced its reinvention of the food court concept with Saluhall, a sustainable dining center inspired by Nordic food principles.

Saluhall is named after the Scandinavian-style “Market Hall.” It will serve food that is 80 percent plant-based, with the aim to increase to 100 percent plant-based in the future. It also has the goal of sending zero waste to landfills and having zero single-plastic usage. With 45 "Meeting Places" concepts operated by Ingka Centres globally, Saluhall will be their first food space to be entirely beef-free.

Junya Ishigami 'excavates' concrete cave for restaurant and residence in Japan

Junya Ishigami + Associates has completed a residence and restaurant for a French restauranter in the city of Ube, Japan. Asked by the client for a space that "has to look as if it has been there and will continue to be there for the longest time," Ishigami responded with a cave-like structure punctured by three courtyards.

The scheme’s construction saw the site excavated to shape an inverse volume of the final design. Concrete was then poured in situ and the surrounding earth excavated further to reveal the final form. Finally, glazing was fixed to external threshold arches to form interior spaces.

How the architect behind Pizza Hut's iconic roof turned a tiny design fee into a small fortune

“As the story goes, Burke had originally charged the brothers a hefty upfront fee that the fledgling pizza start-up wasn’t able to scrape together,” the company wrote in a 2015 blog post. “Instead, they offered Burke $100 per store built using his design, never guessing that Pizza Hut would become the global company that it is today.”

Contemporary licensing agreements between architects and chains like the Hut are typically undisclosed, but the low price commanded for each meant that, for all their liminally-pleasurable aesthetic, the otherwise unknown designer of the "red roof" restaurants, Richard D. Burke, might have raked in a small fortune for the services he rendered overtime since the late 1960s (the real number remains unclear, but Curbed once put the number of built units of his design that still existed by 2004 at around 6,300).

The sometimes odd reuses of Burke’s reportedly $100 apizza (forgive me) creations have been well-documented by bloggers since the beginning of the 2010s and brought about a death knell for over 300 former locations as well as many of the iconic red-tiled roofs that came along with their original designs. Yum! Brands, which now operates Pizza Hut, began shifting away from the model and towards a more modernized look in mid-decade.

Hong Kong's legendary Jumbo Floating Restaurant capsizes in the South China Sea

Hong Kong's iconic Jumbo Floating Restaurant has capsized in the South China Sea less than a week after it was towed away from the city, its parent company said Monday. The restaurant was towed away last Tuesday. The company said it planned to move it to a lower-cost site where maintenance could be carried out. It said that prior to its departure, the vessel had been thoroughly inspected by marine engineers and hoardings were installed, and all relevant approvals were obtained.

The Wes Anderson-like former fine-dining establishment served some rather well-regarded Cantonese cuisine to diners for more than forty years before being closed and decommissioned earlier this month following the Covid-caused economic downturn of 2020. The three-story vessel reportedly went down in heavy seas near the disputed Parcel Islands chain last week while in the process of being towed to an undisclosed “lower cost site,” according to Aberdeen Restaurant Enterprises, the management group responsible for the remaining entity.

Hong Kong’s provisional government had been working on “the rebirth of the floating restaurant” before the sinking, but will now have to shift focus to other preservation efforts as the Jumbo reportedly went down in a spot of ocean more than 1,000 meters (3,280 feet) deep.

One of the more underrated landmarks of 20th-century geopolitics has undergone a complete transformation into a mirrored elevation of the surrounding community thanks to the latest in a global series of innovative redesign projects from Landini Associates for McDonald’s.

To mark its 30th year of operation in the former Soviet capital of Moscow, McDonald’s asked the Australian-based firm to remake the historic Pushkin Square restaurant into a more modern and experimental space that would double as the company’s Russian flagship and the home of a special initiative called Project Ray.

A landmark designation effort backfires in the push to save one historic Los Angeles restaurant from the wrecking ball

LA's famed Taix Restaurant on Sunset Boulevard made headlines earlier this month after a strange ruling by the City Council to designate only certain elements of the century-old establishment a historic landmark in an unprecedented move that could have ramifications for preservation efforts in Los Angeles and across the country for years to come.

The LA Times is reporting that efforts to save Taix from an encroaching redevelopment scheme culminated in a unanimous decision to limit the designation to the restaurant’s signage and cherrywood-topped bar.

The decision is unlike any other in recent history in that it eschews almost the entirety of the Norman Revival building in favor of a plan that recognizes only non-structural components as historic landmarks. PARTISANS completes new bar and restaurant in downtown Toronto

Gusto 501, designed by PARTISANS, is the latest bar and restaurant by restauranteur Janet Zuccarini located in downtown Toronto. The new restaurant takes inspiration from its surrounding industrial neighborhood, utilizing the footprint of the car garage that previously sat on the site.

The facade is a massive operable wall of glass that can open and allow natural ventilation into the space. Two walls made of terracotta and steel frame both ends of the glass front. PARTISANS worked with terracotta to realize a textured interior using bricks cut into six variant angles that create an undulating, corbeled effect.

The glass roof rises 50 feet high and washes the space with natural light and creates an ever-changing interplay of shadows on the textured walls.

Burger King unveils new restaurant designs to address implications of COVID-19

Burger King has unveiled new restaurant designs that are due to better serve customers in a COVID-19 world. With a focus on mobile ordering and curbside pick-up, the new designs embrace a new way of serving visitors by offering drive-in and walk-up order areas, curbside pick-up areas, an enhanced drive-thru experience, exterior dining spaces, and sustainable design elements.

The new design was created by Restaurant Brands International's in-house design team. "The designs we’ve created completely integrate restaurant functionality and technology. The restaurant of the tomorrow merges the best functional technology with unique modern design to elevate our Burger King guest experience,” said Rapha Abreu, Global Head of Design at Restaurant Brands International in a statement. “We designed the interior and exterior spaces like we had a blank sheet of paper, designing without preconceived notions of how a Burger King restaurant should look."

A large-scale wire-mesh sculpture, suspended from the ceiling of Cathédrale restaurant in New York City, is the first commissioned artwork by Tresoldi Studio, the new design outlet founded by Italian artist Edoardo Tresoldi.

Dubbed Fillmore, the installation takes inspiration from the historic architecture of the legendary Fillmore East concert hall in Manhattan's Lower East Side that once hosted The Doors, Janis Joplin, Elton John, and many others. The restaurant is part of Moxy East Village hotel designed by Rockwell Group.

Mumbai-based architecture firm NUDES thinks outside the box with an everyday material, cardboard

Many may remember playing with cardboard boxes as children. The material is widely common and found almost everywhere. However, it is rarely seen in a contemporary design setting. Now imagine having coffee in a fully functioning cafe built almost entirely out of cardboard. Thanks to Mumbai-based architectural firm NUDES, that idea was made into a reality. The new Mumbai-based cafe Cardboard is turning heads with the use of a familiar, cardboard. From light fixtures to chairs and tables, corrugated cardboard fills the entire landscape of the cafe. The interior is comprised of flowing undulating walls made from carefully sculpted cardboard sections.

The World Restaurant Awards reviews restaurants all over the world and considers not only food taste and quality but also recognizes the restaurant as a culture. Created by IMG, the awards celebrate establishments in 12 "Big Plate" categories and 6 "Small Plate" categories. This year it has been announced that the Culver City-based restaurant, Vespertine has received the Atmosphere of the Year Award.

In Bogotá a new restaurant stands in a northern residential neighborhood in Colombia. Studio Cadena, known for their playful and stylistic approach, creates a 7,500 square foot restaurant built with interconnected volumes each with a particular function. Built at residential scale, the restaurant is the second project the studio has done for Masa. Built on the same site as a former house that had gone through several rebuilds, Masa's Bogotá restaurant is the studio's largest built space.

According to Benjamin Cadena, the studio's founder and principal, “The idea is that everything is connected, but the spaces remain fragmented for intimacy. Known for their innovative designs and mesmerizing buildings, Snøhetta has created custom-made cutlery for restaurant Barr in Copenhagen. Collaborating with design brand Table Noir, Snøhetta designed the pieces based on the holistic design experience that compliments the restaurant. Having already designed restaurant Barr's interiors as well as creating the visual identity for the Noma Restaurant Group, Snøhetta's vision was to highlight the restaurant's conceptual expression.

Snøhetta's underwater restaurant is almost complete

Five meters below the surface of the North Sea, near the southernmost tip of Norway, Europe's first underwater restaurant is nearing completion [...] The restaurant was built in about six months on a barge near the coast, then towed into position -- about 600 feet away -- with a heavy-lift vessel. To submerge the structure, containers filled with water were placed inside, before securing it to the sea floor with a total of 18 anchoring points.

In the southernmost tip of the Norwegian coastline, Snøhetta is in its final stages of completing the world's largest underwater restaurant. Submerged five meters below the North Sea, the restaurant appropriately named Under is preparing for its debut in Spring 2019. This 110ft-long structure made its big plunge and was secured to the sea floor in July 2018. This rather delicate and exciting feat was a major milestone for the team.

Under's overall design concept and location along the coastline underwent several revisions. After much discussion with developers and architects, it was decided that placing the restaurant in a much harsher location along the coast was intentional. Developed to withstand the tough winds and waves of the Norwegian coastline, Under's senior architect Rune Grasdal pointed out that the structure's slight curved form helps with wave impact.

Since Archinect spoke with All Square founder Emily Hunt Turner in 2017, the nonprofit civil rights social enterprise now has its first brick-and-mortar gourmet grilled cheese restaurant that opened in Minneapolis earlier this month.

Located along Minnehaha Mile, All Square's mission — which aims to prevent recidivism and employ and empower formerly incarcerated individuals — now has a physical presence. The project symbolizes “the importance of a clean slate and community support while sending a message that those who have paid their debts to society are ‘all square’ with society and should be afforded the right to live, unhindered, into their future,” Turner told Archinect in 2016.

BIG designs Noma restaurant's new “garden village” home in Copenhagen

What was once a military warehouse that stored mines for the Royal Danish Navy is now the new BIG-designed home of the famous Noma restaurant in Copenhagen. Located between two lakes in the city's Christiania community, Noma 2.0 was envisioned as an “intimate culinary garden village,” BIG describes.

At 1,290 m2, the project comprises seven small buildings with 11 connected spaces that are tailored — building materials and all — to their specific functions. The connected spaces are densely clustered around the service kitchen, putting the chefs at the center of it all. With this central position, the kitchen crew can have an overview of every corner of the restaurant.

After years of uncertainty, the iconic Gladstones seafood restaurant on Pacific Coast Highway near Malibu could be replaced with a new beachfront dining complex designed by Frank Gehry and operated by Wolfgang Puck. The Los Angeles County Board of Supervisors cleared the way Tuesday for the Department of Beaches and Harbors to begin negotiations with Puck and his team over development of two new restaurants at the site.

A proposal submitted by Frank Gehry and celebrity chef Wolfgang Puck was selected for the redevelopment of the iconic Gladstones site. While the lengthy negotiations process is barely starting, some were critical about the Department of Beaches and Harbors' selection process. Nicholas Buford and Gregory Plummer — of the Crews food and beverage company and whose proposal came in second — accused the department of favoritism, LA Times reports. Gladstones will operate for at least another two years.
