Acclaimed architect Jeffrey Beers passes away aged 67

New York's Jeffrey Beers International (JBI) has shared news that its founder Jeffrey Beers passed away from a battle with cancer on Monday, March 18th, at the age of 67.

A prominent figure in hospitality design and planning schemes, Beers began his career as an architect in I.M. Pei's New York office shortly before forming his own studio practice in the city in 1986. The next 38 years have seen its brand grow in influence to be synonymous with celebrity chefs and entertainers, corporate America, and international hotel brands.

Beers credited his Fulbright program mentor Oscar Niemeyer and former RISD professor glass artist Dale Chihuly among his influences as he pursued an architecture that suffused fine art, luxury, and a highly-tuned sensibility for good design.

Chipotle launches new all-electric restaurant design pilot

Chipotle Mexican Grill has unveiled a new fully electric restaurant design that aims to utilize 100% renewable energy and maximize energy efficiency in its equipment and systems.

The chain has recently opened restaurants with these new features in Gloucester, Virginia and Jacksonville, Florida, with a third location set to open later this summer in Castle Rock, Colorado. This design pilot will help the company progress towards its sustainability targets, formed in alignment with Science Based Targets initiative (SBTi), to reduce direct and indirect greenhouse gas emissions 50% by 2030 compared to 2019 levels.

Chipotle aims to have more than 100 of its new locations in 2024 utilize this new model. Its impact will be further extended as the company plans to eventually grow to 7,000 locations in North America. The design will continue to evolve as restaurants receive additional feedback and insights.

The glory days of fast food architecture may be gone forever

Goodbye bright colors and unusual shapes. Today, the design is minimal and sleek. Most fast-food restaurants are built to maximize efficiency, not catch motorists’ attention. One critic has called this trend “faux five-star restaurants” intended to make customers forget they are eating greasy fries and burgers. The chains now sport nearly identical looks. Call it the gentrification of fast-food design.

The psychologically manipulative color schemes may remain, but fast food’s once-iconic Googie and mid-century modern designs are quickly being swapped out for more monolith structures. Changes caused by the pandemic and technology are the largest factors, along with the rise in popularity of drive-thru-only chains.

If it goes on unabated, the America your children grow up in could become one vast dystopic warren of bland 5-over-1s, converted strip malls, Amazon fulfillment centers, these unhealthy slat facade Wendy’s stores, and the occasional mass timber luxury tower attainable exclusively to the very rich and well-connected.

IKEA unveils new plant-based food court concept

Ingka Centres, a subsidiary of the Ingka Group (IKEA parent company), has announced its reinvention of the food court concept with Saluhall, a sustainable dining center inspired by Nordic food principles.

Saluhall is named after the Scandinavian-style “Market Hall.” It will serve food that is 80 percent plant-based, with the aim to increase to 100 percent plant-based in the future. It also has the goal of sending zero waste to landfills and having zero single-plastic usage. With 45 "Meeting Places" concepts operated by Ingka Centres globally, Saluhall will be their first food space to be entirely beef-free.

How the architect behind Pizza Hut's iconic roof turned a tiny design fee into a small fortune

“As the story goes, Burke had originally charged the brothers a hefty upfront fee that the fledgling pizza start-up wasn’t able to scrape together,” the company wrote in a 2015 blog post. “Instead, they offered Burke $100 per store built using his design, never guessing that Pizza Hut would become the global company that it is today.”

Contemporary licensing agreements between architects and chains like the Hut are typically undisclosed, but the low price commanded for each meant that, for all their liminally-pleasurable aesthetic, the otherwise unknown designer of the "red roof" restaurants, Richard D. Burke, might have raked in a small fortune for the services he rendered overtime since the late 1960s (the real number remains unclear, but Curbed once put the number of built units of his design that still existed by 2004 at around 6,300).

The sometimes odd reuses of Burke’s reportedly $100 apizza (forgive me) creations have been well-documented by bloggers since the beginning of the 2010s and brought about a death knell for over 300 former locations as well as many of the iconic red-tiled roofs that came along with their original designs. Yum! Brands, which now operates Pizza Hut, began shifting away from the model and towards a more modernized look in mid-decade.

One of the more underrated landmarks of 20th-century geopolitics has undergone a complete transformation into a mirrored elevation of the surrounding community thanks to the latest in a global series of innovative redesign projects from Landini Associates for McDonald’s.

To mark its 30th year of operation in the former Soviet capital of Moscow, McDonald’s asked the Australian-based firm to remake the historic Pushkin Square restaurant into a more modern and experimental space that would double as the company’s Russian flagship and the home of a special initiative called Project Ray.

Copper and brick frame restaurant in Ukraine

YOD Group has completed a new restaurant located in the historic sector of Kyiv, next to Arsenalna square in Ukraine. The new project occupies a basement and ground level of a building that used to be a mansion, built in 1797, called "Ypsilantis House."

Solid brick walls and arch domes shape the interior form of the building, while a stretching copper bridge subdivided the space, creating a reflective accent to the more matted brick aesthetic.

The restaurant has 5 halls and roughly 120 seats. Guests can eat at one of the three main halls, fit with set tables, and later move to the hall with the copper bridge, a balcony-mounted disc jockey, and a bar.

New restaurant designs are betting big on drive-thrus to cope with pandemic

The pandemic accelerated a need for digital menu boards, artificial intelligence, expanding drive-thrus into dual lanes and adding drive-thru only units where available. Many other fast food restaurants like Wendy's, Taco Bell, Del Taco, Burger King, KFC and McDonald's have also shown interest in developing many of these concepts.

With indoor dining areas closed in many, if not most, restaurants since the beginning of the pandemic, the nation's fast food and fast casual franchises are rethinking fundamental design concepts of their operations that will likely become part of the American vernacular for decades to come, such as AI-powered pickup-only stations with double or triple drive-thru lanes.

PARTISANS completes new bar and restaurant in downtown Toronto

Gusto 501, designed by PARTISANS, is the latest bar and restaurant by restauranteur Janet Zuccarini located in downtown Toronto. The new restaurant takes inspiration from its surrounding industrial neighborhood, utilizing the footprint of the car garage that previously sat on the site.

The facade is a massive operable wall of glass that can open and allow natural ventilation into the space. Two walls made of terracotta and steel frame both ends of the glass front. PARTISANS worked with terracotta to realize a textured interior using bricks cut into six variant angles that create an undulating, corbeled effect.

The glass roof rises 50 feet high and washes the space with natural light and creates an ever-changing interplay of shadows on the textured walls.

The ghost kitchen is an increasingly crowded space. In addition to Reef, there are Zuul and Kitchen United in the United States, Deliveroo in London and Paris, and Panda Selected in China. CloudKitchens, the new venture run by Travis Kalanick’s City Storage Systems, buys real estate, brings in kitchen facilities, and leases them to chefs and small-business owners, most of whom do not have other brick-and-mortar spaces.

A large-scale wire-mesh sculpture, suspended from the ceiling of Cathédrale restaurant in New York City, is the first commissioned artwork by Tresoldi Studio, the new design outlet founded by Italian artist Edoardo Tresoldi.

Dubbed Fillmore, the installation takes inspiration from the historic architecture of the legendary Fillmore East concert hall in Manhattan's Lower East Side that once hosted The Doors, Janis Joplin, Elton John, and many others. The restaurant is part of Moxy East Village hotel designed by Rockwell Group.

With the restaurant's completion in March 2019, Europe's first underwater restaurant was a highly anticipated project from none other than Norway's Snøhetta. Mumbai-based architecture firm NUDES thinks outside the box with an everyday material, cardboard

Many may remember playing with cardboard boxes as children. The material is widely common and found almost everywhere. However, it is rarely seen in a contemporary design setting. Now imagine having coffee in a fully functioning cafe built almost entirely out of cardboard. Thanks to Mumbai-based architectural firm NUDES, that idea was made into a reality. The new Mumbai-based cafe Cardboard is turning heads with the use of a familiar, cardboard. From light fixtures to chairs and tables, corrugated cardboard fills the entire landscape of the cafe. The interior is comprised of flowing undulating walls made from carefully sculpted cardboard sections.

Snøhetta's underwater restaurant, first of its kind in Europe, completes

This week, Europe's first underwater restaurant (and the largest of its kind in the world) will open its doors to its first set of diners. Guests will be treated to a 15 to 18 course set menu featuring dishes that showoff locally sourced ingredients like sea arrow grass and Norwegian berries, as well as a lot of seafood.

Under, which has the dual meaning in Norwegian of "below" and "wonder," has been designed by the international firm Snøhetta, who have had a recent string of buzzed-about architectural proposals amongst which the submerged dining room has stood out prominently.

Sitting 16 feet underwater, construction for the project was an ambitiously orchestrated affair. The restaurant had to be built on a barge near the coast and then towed 600 feet to its intended location. The World Restaurant Awards reviews restaurants all over the world and considers not only food taste and quality but also recognizes the restaurant as a culture. Created by IMG, the awards celebrate establishments in 12 "Big Plate" categories and 6 "Small Plate" categories. This year it has been announced that the Culver City-based restaurant, Vespertine has received the Atmosphere of the Year Award.

Nestled within Culver City's Hayden Tract, the restaurant was the vision of Chef Jordan Kahn who collaborated with famed architect Eric Owen Moss. Snøhetta's underwater restaurant is almost complete

Five meters below the surface of the North Sea, near the southernmost tip of Norway, Europe's first underwater restaurant is nearing completion [...] The restaurant was built in about six months on a barge near the coast, then towed into position -- about 600 feet away -- with a heavy-lift vessel. To submerge the structure, containers filled with water were placed inside, before securing it to the sea floor with a total of 18 anchoring points.

In the southernmost tip of the Norwegian coastline, Snøhetta is in its final stages of completing the world's largest underwater restaurant. Submerged five meters below the North Sea, the restaurant appropriately named Under is preparing for its debut in Spring 2019. This 110ft-long structure made its big plunge and was secured to the sea floor in July 2018. This rather delicate and exciting feat was a major milestone for the team.

Under's overall design concept and location along the coastline underwent several revisions. After much discussion with developers and architects, it was decided that placing the restaurant in a much harsher location along the coast was intentional. Developed to withstand the tough winds and waves of the Norwegian coastline, Under's senior architect Rune Grasdal pointed out that the structure's slight curved form helps with wave impact.

Peek inside All Square's new grilled cheese restaurant in Minneapolis, designed by Syracuse-based Architecture Office

Since Archinect spoke with All Square founder Emily Hunt Turner in 2017, the nonprofit civil rights social enterprise now has its first brick-and-mortar gourmet grilled cheese restaurant that opened in Minneapolis earlier this month.

Located along Minnehaha Mile, All Square's mission — which aims to prevent recidivism and employ and empower formerly incarcerated individuals — now has a physical presence. The project symbolizes “the importance of a clean slate and community support while sending a message that those who have paid their debts to society are ‘all square’ with society and should be afforded the right to live, unhindered, into their future,” Turner told Archinect in 2016.

Joyce Wang Studio’s MOTT32 in Hong Kong wins World Interior of the Year 2014

Joyce Wang Studio's MOTT32, an underground bank vault-turned-restaurant in Hong Kong, scooped up the World Interior of the Year 2014 award today at the Marina Bay Sands. The "super jury" of the INSIDE: World Festival of Interiors competition nominated 60 interior design projects worldwide, which were then narrowed down to nine category winners. When deciding upon the World Interior of the Year out of the category winners, the jury unanimously decided on MOTT32.

The 10-person team of Joyce Wang Studio explored Hong Kong culture's past and present in transforming the former storage facility, which housed expensive family heirlooms for wealthy Chinese immigrants, into the MOTT32 restaurant. The dining space has remnants of forgotten heirlooms, Chinese propaganda, and industrial accents that double as furniture and light fittings.

.PSLAB's "lion fish" chandelier adds the finishing touch to The Jane Antwerp

The Jane restaurant in the Groen Kwartier of Antwerp still brandishes the now-trendy artisanal interior of the military hospital chapel it once was. Throughout the entire design process, Michelin Star Chef Sergio Herman and Nick Bril closely collaborated with Dutch practice Piet Boon Architects, who then brought in .PSLAB, a site-specific Beirut studio whose work specializes in creating sensory experiences.

Complementing the brass, stone, leather, and oak, the focal point of the restaurant is .PSLAB's handcrafted chandelier that the studio nicknamed the "Lion Fish". The chandelier boasts a radius of 12 x 9 m and a weight of 800 kilograms. Its black-finished tubes are accented with over 150 glass light bulbs that disperse upward toward the vaulted ceiling. The studio also describes that at 2.75 m above the ground, "the chandelier communicates a very human scale."
