Replacing a parking lot with a field of wheat, this bakery allows members of the community to actively contribute in the process of bread making. The volume of earth removed to make the cellar is balanced in rammed earth walls surrounding the baking area. School groups can help maintain the wheat, then observe the harvesting, milling, dough-making, baking, and cutting. An average yield can produce 900 loaves of “home-grown” bread, baked and made on-site. With two apartments above, the Bakery is a live-work solution tying local business with the community.
